Spain’s best known sheep’s milk cheese, Manchego is made exclusively from the milk of the Manchega sheep raised in the La Mancha region – famous for its fierce winds, temperature swings and arid, desert-like conditions. Iberico is a mixed milk firm cheese with mild, grassy flavor. Queso de Cabra has a mild, creamy taste. Serve cheeses with olives, Membrillo (quince paste), Marcona almonds, Chorizo sausage & thinly sliced Serrano ham – accompanied by toasted baguette slices rubbed with fresh juicy tomatoes, finely chopped garlic & drizzled with olive oil.
